Method

Beat the whites with 2 tblsps. water. Add the fish and mix well. Beat the yolks separately with 2 tblsps. water and mix in the ham and salt.

Combine the two in a lightly greased bowl without letting each mix if possible.

Steam till set. When done there will be a two-tone omelete having 2 colours of gold and silver. Sprinkle parsley and pepper on top and serve hot.
